Doughnut Cupcakes
So today we tried out a new recipe (thanks Pinterest!) and Tyler loved it so I thought I would share it. They are called Doughnut Cupcakes!
So naturally, after making some yummies, we went outside to have a picnic and plan some future goals. I would say that it was a successful Sunday and the relaxation was needed especially after having taught our sunbeams class this morning. I don't know if it's because it was perfect weather today but they were at the top of the levels for energy so we felt completely dead after church. And now here we are, sitting on the couch watching Prison Break, our new addiction TV Show. Seriously. It's so good and my brain won't turn off thinking about it ever. At night in bed when I should be sleeping I'm wondering what will happen next and during work I'm just raving about it to my co-workers. My name is Rifka Jensen and I'm an addict! ha! 3/4 cup sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup vegetable oil
3/4 cup milk (low fat is fine)
1 tsp vanilla extract
2 tbsp butter, melted
1/2 cup sugar, for rolling
Preheat oven to 350F. Lightly grease a muffin tin with cooking spray or vegetable oil.
In a large bowl, beat together sugar and egg until light in color.
In a small bowl, whisk together flour, baking powder, salt and nutmeg. Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract.
Divide batter evenly into 10 muffin cups or ~24 mini-muffin cups, filling each about 3/4 full.
Bake for 15-18 minutes for standard-sized muffins or 11-12 minutes for mini-muffins, until a tester inserted into the center comes out clean.
While muffins are baking, melt butter and pour remaining sugar into a small bowl.
When muffins are done, lightly brush the top of each with some melted butter, remove from the pan and roll in sugar. Cool on a wire rack.
Yield: ~10 standard muffins or ~24 mini-muffins

Well I guess I have some catching up to do...
Well hello friends!
Sorry I haven't updated this in forever! These past couple of weeks have been busy. Well, for one I graduated! Actually, I only half-graduated because it was my associates degree, but according to Tyler, that's still worth celebrating! Tyler and I flew out to Utah and drove up to Rexburg, Idaho with his parents. I was able to walk at BYUI, along with my brother and sister in law, who both graduated also. It was a good trip. All of Tyler's family was able to come including grandparents, aunts, parents and some cousins. It was great hanging out with them. While in Rexburg, we were able to stay with my second family growing up, the Dunlops, and Tyler was able to get to know them better. It was great. I think he saw a new side of me while hanging out with them because I may have resorted back to my childhood ways while being with Hannah. I've known her since I was probably four years old, so it's always a good time hanging out with her and her Mom. We love them. Thanks again for having us!
The Monday following graduation, Tyler's cousin got married so we were able to make it to the ceremony and part of the reception before catching our plane back home. It was a nice treat to see them seal the deal and see all of the family that was there for the ceremony. They got married in the SLC Temple so visiting temple square and the going in the temple is always a treat.

Okay, for update #2: I got a haircut! I did it right before graduation and I know that by no means is this nearly as big as news, but it's a change! As most of you know I've had long hair for forever so its been nice to chop it and start fresh, but every now and then I miss it a little. Here is the before and after picture:
Okay update #3 - We're training for a 5K! Not a huge run but it's much more than what I've been doing! My co-worker Katie found it online and so I think that we may run it as an office but Tyler is going to join! I'll be sure to take some pre-training photos and some post photos so that we can see some before and after progress (hopefully we'll see some progress!!). Katie and I are going to start training this week and we're both looking forward to losing this winter warmth weight!

Update #4 I got a sewing machine as a graduation gift from in-laws and I love it! I've been going at is with my craft projects and it also got me into finishing up some decoration ideas that I've had for my apartment. My first project was to make a bag holder for all of those pesky Wal-Mart bags that come home from every shopping trip and have no place. It was my first sewing project in a while but it fills its purpose!
The next project that I worked on as far as our apartment was in our bedroom. Got the walls all spruced up and I finally found some of the colors that I've been looking for. We splurged and got it the way we want it for now while in this little apartment.
We also finally used up some of our gift cards that we've been saving and got the things we need for our kitchen! Yay! It was time!

Okay, last update: Tyler has gotten better at hiding. You are probably wondering what in the world I am talking about. We are such goofballs and what we do to make our lives a little more exciting is hide and jump out or just hide from each other. I know it sounds dumb but it's actually pretty challenging if you have ever seen our apartment. It's 1 bedroom, 1 bathroom and the living room and kitchen are connected. There seriously are not very many places to hide. So the other day I came out and could not find Tyler anywhere and after like 15 minutes and even checking outside I found him. This is where he was:
Well those are our updates. Sorry that they aren't very exciting! You can tell life isn't very crazy for us yet. We are currently in the process of hearing back on and making some life plans so maybe bigger and better updates will be coming soon... we'll just have to see! Keep us in your prayers though.
